The Chicory plant has a long history of herbals use. It has been cultivated for its leaves or thick roots. The young leaves can be eaten raw or cooked and the roots are used as a coffee substitute. Clusters of blue or lavender flowers adorn the mostly naked branches of this herbaceous plant. The succory is long blooming season perennials. It blooms from june to september.
